The red velvet cake is my daughter Vicky‘s favorite cake. For that reason, I have created the best recipe for red velvet pancakes, and because of its intense red color, it fits very well on Valentine‘s Day, as a special breakfast during the Christmas season.
A pancake is synonymous with a spongy cake made in a pan in record time. So, I envisioned a tower of fluffy red chocolate cakes dipped in a decadent cream cheese syrup topping that could slide around those round romantic red cakes. Worthy of a good breakfast for those I love the most.
What Ingredients you Need to Make Red Velvet Pancakes
- Flour: Just all–purpose flour. But for a healthier version, you can try this flour in equal quantities.
- Sugar: Regular granulated sugar.
- Baking Powder: To get good fluffy pancakes you’ll need a full tablespoon of baking powder.
- Baking Soda: you’ll need a full tablespoon as well
- Cocoa Powder: This gives the pancakes a slightly chocolate flavor. All you need is two teaspoons!
- Salt: I like to use fleur de salt, but sea salt or table salt will also work.
- Buttermilk: I tried the most similar to red velvet cake. So buttermilk would be even better! 1 1/2 cup.
- Eggs: Please choose two extra large eggs for fluffy pancakes.
- Butter: You could use melted butter in place of vegetable oil if desired 1/2 cup.
- Food Coloring: You may also think that two tablespoons are a lot of food coloring, but it depends on the brand, try a good one like this food color. You could start with one tablespoon, try a little mix in a pan, and check the red color level. If you see a dark pink color, add a second tablespoon.
What Ingredients you Need to Make Cream Cheese Glazed
- Cream Cheese: This is for the cream cheese topping. Make sure it is at room temperature.
- Powdered Sugar: Also, for the cream cheese topping.
- Vanilla Extract: For the best flavor, make sure it is a pure vanilla extract, not an imitation.
- Fleur de Salt: I love this kind of salt. However, use simply salt. A bit of salt will add a lot of depth to cream cheese syrup.
- Milk: You can add more or less to your liking. I like the icing to drizzle, so I’ll be a little more heavy–handed. 3 or 4 Tablespoons.
How to Make Red Velvet Pancakes
- Whisk the dry ingredients together flour, sugar, baking powder, baking soda, cocoa powder, and salt.
- Then, whisk together the milk, egg yolks, butter, and red food coloring.
- Add the wet ingredients to the dry ingredients and mix until there are no dry spots. The batter will be granulated. Keep calm, that’s ok!
- Place the egg whites in a dry small bowl and beat with a hand mixer until stiff peaks form. Stir one–third of the whipped egg whites into the batter, then gently fold in the remaining two–thirds of the whites. Don’t overmix. Just fold in until no white streaks remain.
- Heat a griddle or nonstick pan over medium heat. Use your 1/3 cup as the measure for each pancake, and cook until the pancake is bubbling and the edges start to dry out. Flip and cook the second side. Continue until all of the batters have been used.
How to Make Easy Cream Cheese Glazed
- To make the cream cheese glazed, combine the cream cheese, powdered sugar, vanilla, salt, and milk in a bowl. Start beating, and add milk until you have a pourable consistency.
- Serve the pancakes topped with the cream cheese drizzle.
