Description

Almond flour has become the successor to conventional white flour, opening a channel of many benefits to physical and mental health. Nuts are a fundamental pillar in any diet, and in addition, they have endless benefits for our bodies.


Ingredients

  • 5 large white


  • 5 yolk eggs


  • 1/2 cup + 2 tablespoons Xylitol type sugar (divided into 2 1/4 cups)


  • 1 tsp vanilla extract


  • 2 cups of almond flour


  • 1 tsp baking powder


  • 1/4 teaspoon of salt



Instructions



  1. Preheat oven to 350°F or 180°C.


  2. Lightly grease a bundtcake pan.


  3. In a large bowl, beat together: egg yolks, 1/4 cup sugar, and vanilla until smooth and creamy, light in color.


  4. Using an electric mixer, beat the egg whites until soft peaks form.


  5. Slowly add the remaining 1/4 cup of sugar.


  6. Mix the dry ingredients: almond flour, baking powder and salt.


  7. Add to the egg yolks. Mix to form a thick dough.


  8. Little by little, add the previously beaten egg whites. The final addition should result in a light and fluffy batter.


  9. Pour the cake mix into the prepared pan.


  10. Bake cake on center rack for about 30 minutes or until golden brown and a toothpick inserted in center comes out clean.


  11. Remove the cake from the oven and leave it to cool in the pan for 5 minutes.


  12. Unmold the cake on a serving plate.


  13. Allow the cake to cool completely before serving.


Notes



  • You can cut into equalsized portions and freeze for up to three months.


  • You can replace the vanilla extract with brandy or cognac
