Ingredients
- 5 large white
- 5 yolk eggs
- 1/2 cup + 2 tablespoons Xylitol type sugar (divided into 2 1/4 cups)
- 1 tsp vanilla extract
- 2 cups of almond flour
- 1 tsp baking powder
- 1/4 teaspoon of salt
Instructions
- Preheat oven to 350°F or 180°C.
- Lightly grease a bundtcake pan.
- In a large bowl, beat together: egg yolks, 1/4 cup sugar, and vanilla until smooth and creamy, light in color.
- Using an electric mixer, beat the egg whites until soft peaks form.
- Slowly add the remaining 1/4 cup of sugar.
- Mix the dry ingredients: almond flour, baking powder and salt.
- Add to the egg yolks. Mix to form a thick dough.
- Little by little, add the previously beaten egg whites. The final addition should result in a light and fluffy batter.
- Pour the cake mix into the prepared pan.
- Bake cake on center rack for about 30 minutes or until golden brown and a toothpick inserted in center comes out clean.
