How to make mashed cauliflower, a simple flavorful side dish. Of course you can! As a food lover, I am always looking for ways to make classic dishes healthier without sacrificing flavor. And one of my favorite swaps is to use mashed cauliflower instead of traditional mashed potatoes.


Ingredients

Garlic Mashed Cauliflower:





  • 2 (16-ounce) packages riced cauliflower, or 1 large head cauliflower (about 3 pounds)


  • 3 or 4 garlic cloves mashed


  • A handful of parsley


  • 2 tablespoons olive oil


  • 3 tablespoons of vegetables milk


  • 1 teaspoon kosher salt


  • 1 teaspoon of black pepper


  • Parmesan cheese



Creamy Mashed Cauliflower





  • 2 (16-ounce) packages riced cauliflower, or 1 large head cauliflower (about 3 pounds)


  • 2 tablespoon of heavy cream


  • 3 tablespoons of butter


  • 1 teaspoon of kosher Salt


  • 1 teaspoon of black pepper



Instructions





  1. Steam or boil cauliflower and garlic until soft.







  2. In the same pot, add the olive oil, milk, salt, pepper and purée with an immersion blender. (If you dont own a hand blender, you should consider getting one. It is one of my most used gadgets in my kitchen, youll wonder how you ever lived without it!) A regular blender would work fine as well.







  3. Cut the parsley very small and grate Parmesan cheese and place it as a topping.







  4. Serve it in a deep plate.
